Basic Sponge Cake Recipe. In a large bowl, beat egg yolks until light, gradually adding in the sugar. Add in vanilla and lemon and set aside.
Melt the butter and after it has cooled, whisk in the vegetable oil.
Line bottoms with parchment; butter parchment and flour pans, tapping out excess flour.
Sift together all dry ingredients, flour, baking powder, baking soda and salt. Take the oil and castor sugar in another bowl. Pour ⅓ of the mixture into the batter and gently mix.
